Black Teas

Black tea is by far the most consumed tea in the Western world and consists of 90% of the tea trade volume. Black tea actually starts out green, but during the production process, the tea is oxidized and turns black releasing the tea's full big bodied flavor. Although many people enjoy black tea taken with milk or sugar, you may find some teas labeled "self drinking" which denotes that this normally powerful tea tastes great alone without the additives. The most common black teas originate in places like China, where the method for making black tea originated. Black Tea is also made in India which supplies a significant portion of black tea, and in Sri Lanka, which is the leader in the world's tea production. Studies all over the world have shown significant benefits from drinking black tea. A study in Saudi Arabia showed improvement in the function of abnormal blood vessels within two hours of drinking black tea! Did you know that tea ranks just as high as most fruits or vegetables in the measurement of antioxidant potential? To make the perfect cup of tea, black tea should steep at the waters third boil. That would mean the water would be erupting with bubbles, a kettle would be singing with all it's glory. This will ensure that the full flavor of the heavy hearty black tea herb would be released for your enjoyment. Steep 3-5 minutes depending on the strength of tea you prefer. Color change will not always indicate the flavor, you must taste test. Sip slow allowing the aroma to reach you first, as the flavor of black tea is first noticed through the sense of smell. These premium black teas come in many unique gourmet blends and are all in loose-leaf form.

 

India Darjeeling, Tippy Gold Broken Orange Pekoe (TGBOP) 100% Darjeeling

     Origin: Mirik, Darjeeling, India.

This Darjeeling has a distinctly sharp, berry character with good color. This fine tea is from the Mim Estate grown in the Darjeeling district of India, nestled in the southern slopes of the Himalaya Mountains at elevations of 6800 feet. From the town center on a clear day the peak of Mount Everest can be seen. Darjeelings are the most precious tea qualities of the world. They possess an exquisite bouquet and flavor and a distinctive "muscat" character almost wine-like in taste in a lovely and light cup. Legend has it that a thunderbolt of Lord Indra (the king of heaven in Hindu mythology), struck the earth at Observatory Hill. The Tibetan words, "Dorje", meaning the thunderbolt of Indra and "Ling", a place, form "Dorge-Ling" or "Land Of The Thunderbolt". The planting of tea in the Darjeeling district was swift and dramatic. In 1841 Dr. Campbell planted the first seedlings outside his bungalow in the town of Darjeeling. By 1874, almost 15,000 acres had been cleared and replanted with tea, creating most of the area's current 85 plus gardens. Today the total area under tea is nearly 47,000 acres producing only 3% of the country's total annual output, yet the name Darjeeling is probably one of the most recognized names in all of tea. Darjeeling's preeminence as India's foremost producer of premium quality black teas is due to a unique combination of factors. Higher elevation, soil type, hilly terrain with excellent drainage, weather pattern and age and diversity of bush all lend a hand in helping create a flavor profile which cannot be replicated anywhere else on earth. 

Assam Broken Orange Pekoe Tea      Origin: Satrupa, Assam, India.

This Assam is great as part of a blend or by itself provides a bright colored liquor with good body and a full flavor. On both sides of the mighty Brahmaputra river, lie the rolling plains of the world's largest tea growing area. The Assam region consistently produces more tea per acre than any tea-producing region in the world. Tea bushes cover nearly 500,000 acres giving the impression of a gigantic billiard table stretching as far as the eye can see. Around Assam's verdant tea bushes lay India's richest game reserves. Wild elephants, one-horned rhinos, swamp deer, wild buffalo and leopards are just some of the native wildlife in this area. And from this area grows nearly 600 million pounds of tea annually, yielding the strong, pungent, full-bodied liquor that has made Assam world-famous. Assam is the birthplace of India tea. In 1823, Englishman, Robert Bruce discovered Camellia Sinensis growing wild in this region. In 1839 the first eight chests of India tea were offered at the auction in London. All of the gardens in the Assam region are virtually on the same plain with an altitude of approximately 500 feet. The alluvial soil distributed by the river and the climatic conditions of the area, lend themselves ideally to tea cultivation. The basin gets between 80 to 120 inches of rainfall moderately distributed throughout the year with a heavy concentration of monsoon showers from August to mid-October. January and February being the only dry months, cropping begins in early March and extends almost to mid-December. March ushers in the hectic plucking season. The dormant bushes come to life and the first leaves of the new season start sprouting. The picking of the first flush leaves will last 8 to 10 weeks. June begins the season for second flush teas. Assam leaves are characterized by an excessive amount of silvery pubescence called "tip". The "tippy" Assam teas of both first and second flush produce top quality liquor with body and strength. August to October brings the heavy rains. All vegetation grows at a tremendous rate during monsoon season. Rightly called Rains Tea, teas produced during these months account for almost 75% of the region's annual yield. Better suited for CTC (crush, tear, curl) manufacture, Rains Tea has enhanced characteristics of strength, grip and color and is often a favorite in countries where the preference lies in a good, strong cup with milk. Most of the teas manufactured in Assam will be transported by truck or railway to the auction houses in Calcutta, India for sale abroad. A smaller, more convenient auction center has been set up in Gauhati for the sale of teas meant for consumption within the country.

Ceylon Supreme Flowery Orange Pekoe Tea     Origin: Uva, Sri Lanka.  

The rolled and round curly leaf provides a brew with a heavy body. The most precious black tea is grown in the western areas of the island of Sri Lanka. This gourmet tea has a dark liquor. The 'orange' in orange pekoe possibly comes from the fact that these particular leaves have a golden orange color when plucked, or that in China sometimes orange blossoms were added to these leaves for flavor. Another suggestion is that it refers to the Dutch House of Orange. It does not have anything to do with the flavor of the tea leaves themselves.  

Earl Grey Tea

Earl Grey is named after its English benefactor, Charles Earl Grey, who for a short time served as Prime Minister under King William IV in the 1830's. The unusual flavoring that makes Earl Grey so magnificent is the oil of bergamot, which is in the citrus family. Bergamot comes from the Turkish word for "prince's pear" and describes a pear shaped citrus that is grown around the Mediterranean. The oil is pressed from the rind and is used for perfume as well as our Earl Grey tea. We take the concentration of this exotic flavor and blend it with mild teas of China and Sri Lanka. The aroma and flavor of the bergamot shine through and create a lovely tea. Legend has it that a Chinese mandarin man may have given this tea with bergamot oil to Earl Grey as a gift to thank him for one of Lord Grey's men saving his drowning son. He enjoyed it so much the secret recipe was passed onto him. Some other fun facts are that this is the reported favorite tea of Fictional characters James Bond 007, Bruce Wayne from Batman and Frasier from the TV series. This is one of those teas that really stand out from the pack; it is very distinctive and enjoyable.  

English Breakfast Tea

English Breakfast Tea is a gourmet black Northern Indian tea. You will find it to have a full body and to be a rich robust cup. This tea is expected to be served with milk and a sweetener much like the British have prepared their morning tea for over a century. Once the black tea has been mixed with milk, its aroma magically changes to a very familiar scent of warm toast and honey! Famous for their morning "fry-ups" the Englishman's breakfast can consist of some pretty greasy food items such as bacon, sausage, and eggs. The tea that they drank needed to be rich enough to keep up with these other strong flavored items. English breakfast tea was perfect for this fare. When enjoyed with milk and sugar, the silky texture, although still very stimulating, then takes on a much more mild flavor, perfect for toast, muffins and biscuits. Although it is of course a custom to have black tea blends every morning in England, the term "English breakfast tea" did not originate in England, but instead the term originated in North America in the colonial times. This tea, known as English breakfast tea is highly admired all over the world. Celebrated for its bold flavor, this gourmet tea is one of our best selling and sure to win you over.

Market Ceylon Spice Tea

Developed in the early 60's in Seattle, this high grown Ceylon black tea is gently blended with a concoction of clove, orange essence and cinnamon to create an aromatic and soothing spiced tea. Although you are welcome to add milk or sugar, this tea is naturally sweet and delicious. The flavor is spicy, pungent and each sip will leave you wanting more. The flavor is similar to orange-spice tea, but with a surprising kick. One reviewer mentioned that he brewed Market spice tea at work and the intoxicating aroma floating through the air had everyone gathered at his desk asking what sumptuous flavor it was! Once you try Market spice tea, you will see there is no going back. It is a one of a kind taste that is truly exceptional. We deliver this tea to you in loose-leaf form for exceptional flavor and freshness.

Lapsang Souchong Tea     Origin: Fujian, China.

Lapsang Souchong tea comes from the Fujian province of China. This is a very distinctive tea with an exotic smoky flavor. Lapsang-Souchong has grown in popularity with those who appreciate single malt Scotch whiskey and fine cigars. The preparation of the leaves involves withering over cypress or pine wood fires. After the rolling process, they are placed into wooden barrels until they begin to emit their own pleasant aroma. As a final step they are placed in bamboo baskets and hung over smoky pine fires where they dry and absorb the smokes essence. The finished tea is thick and black and when steeped in hot water produces a bright burgundy-orange cup of tea. The flavor is assertive and bold.

Formosa Oolong Tea

Oolong tea gets its name from the Chinese wu-lung, which means, "Black dragon" and it represents a cross between green and black tea. Gaining more and more popularity in the US, once you try it, Formosa Oolong tea might quite possibly turn out to be your new favorite! Loaded with potential health benefits this is a beautiful tea with full, refreshing, fruity-sweet aromas and flavors to match. Like many things in the world, Oolong tea was discovered by accident. A Chinese gardener was getting ready to prepare his tea when a deer distracted him. He killed and prepared the deer and forgot all about his tea leaves. The next day when he rediscovered them, he thought they might have gone bad since they had started to change color, but he decided to finish the process anyway. After all the preparations were made, he sat to have his tea and realized that this was a much more flavorful and aromatic tea that what he had been drinking...and Oolong was born. Formosa Oolong teas are produced in Taiwan, next to China, and they produce the largest quantity of Oolong in the world. Leaves are plucked as the sun rises and then are laid out to wither in the hot sun. The leaves may be intentionally bruised slightly to stimulate the fermentation process. Tea artisans that are waiting for the perfect blend of red and green leaves watch over them carefully. The leaves are then dried, expertly graded and passed through strict quality control for packaging. Formosa Oolong teas have a long list of potential health benefits because they are only partially fermented and remain essentially in their natural state. Oolong tea leaves are full of antioxidants and polyphenols that, when drank daily, may protect you from serious illnesses such as cancer and heart disease. Tisanes

Hibiscus leaves and Rose hip are used throughout these herb and fruit blends, which give the added benefit of naturally occurring vitamin C. Made with the best ingredients that Mother Earth has offered us, this is a delicious path to good health! Tisanes, also known as an herbal infusion, are not made from tea leaves, but they are brewed with the same method. A little Tisane goes a long way! Apricot Supreme Tisane

This fruit tisane contains peach, apricot, rosehips, hibiscus leaves, and marigold petals. The marigold plant is known to stimulate the liver and it has anti-inflammatory properties. This blend is an excellent antiphlogisitc for skin disease. It promotes wound healing and can help throat and mouth infections. Tisane is not only an amazing drink when you sip it warm from a teacup, but also it is also just as delicious poured over ice and sipped on a hot summer day. Berry Berry Tisane

Black & Red Currants, raisins, rose hips, and hibiscus leaves. You can’t go wrong with currants they are unbelievable. Black and red currants are known to have twice the potassium of bananas and four times the vitamin C of oranges and twice the antioxidants of blueberries! They have amazing anti-inflammatory action and can reduce the effects of arthritis.

Cranberry Apple Tisane

Cranberry, apple, rosehips, and hibiscus leaves. Naturally sweet and tart cranberries are used to maintain heart health and preventing urinary tract infections. This is the tea that we chose as our house tea at “A Fine Time for Tea”. It was so well liked, we never changed it to anything else.


Lemon Mango Tisane

 Mango, lemon, apple, hibiscus leaves, rose hips. The lemon itself is amazing. High in vitamin C and bioflavonoid, it helps to prevent infection, strengthens veins, blood vessels and capillaries and helps to prevent bruising and varicose veins. It is also an anti rheumatic; antioxidant and can help reduce a fever and acid wastes from the body. This was also one of the favorite teas of our customers, young and old.

Herbal Teas

 The benefits of drinking herbal tea have been known for centuries. Made from Mother Earth’s own herbs and fruits, they offer a distinct and exciting taste that is also good for you. Rooibos African Red Bush Tea

Rooibos tea comes from the South African Red Bush and although it is a popular beverage in southern Africa, it is only grown in a very small area of the Western Cape Province. This tea has a unique, very enjoyable herbal flavor unlike anything else you have tried. Naturally sweet, most people will find they like it without adding sugar. It is also unique in the fact that it will not become bitter if steeped too long. Some places in Africa actually leave it to steep for days! Rooibos tea contains no caffeine and no added colors or preservatives, making it a natural beverage. Rooibos has been shown to aid in health problems such as insomnia, irritability, headaches, nervous tension, and hypertension. Its reported health benefits are making this tea particularly popular in the western countries among the health conscious consumers. Studies also show that this tea contains anti-spasmodic agents, which can relieve stomach cramping and colic in infants. In South Africa, Rooibos is used to treat allergies, hay fever, asthma, eczema, and irritated skin very effectively by being brewed, cooled, and placed directly on infected areas. Rooibos contains anti-oxidants, which can help slow the aging process and boost the immune system. It also contains the minerals, copper, iron and potassium, calcium, fluoride, zinc, manganese, alpha-hydroxy (for healthy skin) and magnesium (for the nervous system). Early on Dr le Fras Nortier realized the potential of this wild tea. He encouraged farmers to try to grow rooibos since it was so difficult to find or to cultivate. After many failed attempts, there was finally success and the price of the rooibos seeds soon rose to be the most expensive vegetable seed in the world. You may have heard about this tea recently as it is featured in the “Ladies Detective Agency”.

Yerba Mate Tea

Beneath the rainforest canopy in South America, the Guarani Indians have been drinking the steeped juice of the leaves of the wild yerba tree-bush for centuries. They cite numerous health benefits, including increased immune system strength, improved digestion, stress reduction, and stimulation of mental processes. In 1964 the Pasteur Institute and the Paris Scientific society concluded "it is difficult to find a plant in any area of the world equal to Mate in nutritional value" and that Yerba (pronounced Sherba) Mate contains "practically all of the vitamins necessary to sustain life." Today, over 300,000 tons of Yerba Mate is produced yearly for consumption in Brazil, Argentina, Uruguay, and Paraguay. It is truly the South American passion! Yerba Mate comes from a tree, "Ilex Paraguariensis", cultivated in South America. The yerba is the leaves; dried and crushed to make a tea-like herb. You may add sugar or honey to sweeten the Yerba as the Argentineans do. Or drink it plain as the majority of South America does. To allow proper flavor release and to avoid a bitter flavor, Yerba tea should be steeped in hot water, not boiling. By using a "hot steep" you can infuse the same tea leaves several times and still experience an excellent tea. You will find this tea to be vegetal, herbal, and grassy much like a green tea. It is common practice still today to have friends gather round for a passing of the gourd. Passed in a counterclockwise motion, the gourd filled with Yerba Mate is passed from person to person drinking until the host, who prepares the beverage, runs out of water.

Green Teas

Chinese Hyson Tea     Origin: Anhui Province, China

Chinese Hyson green tea originates from Anhui province in China. This tea is harvested before the rains and carries a delicious earthy, sunny flavor. Hyson green tea is best boiled at a water temperature of less than 180F degrees. Steeping too long or in too hot of water can cause bitterness. Use only one teaspoon per 6oz cup of water. Served hot it typically doesn't require milk or sugar however; it is also excellent served cold and is delightful with a garnish of lemon or a twist of lime. Formosa Oolong Tea (see also in Black Teas)     Origin: Taiwan

Oolong tea gets its name from the Chinese wu-lung, which means, Black dragon and it represents a cross between green and black tea. Gaining more and more popularity in the US, once you try it, Formosa Oolong tea might quite possibly turn out to be your new favorite! Loaded with potential health benefits this is a beautiful tea with full, refreshing, fruity-sweet aromas and flavors to match. Like many things in the world, Oolong tea was discovered by accident. A Chinese gardener was getting ready to prepare his tea when a deer distracted him. He killed and prepared the deer and forgot all about his tea leaves. The next day when he rediscovered them, he thought they might have gone bad since they had started to change color, but he decided to finish the process anyway. After all the preparations were made, he sat to have his tea and realized that this was a much more flavorful and aromatic tea that what he had been drinking...and Oolong was born. Leaves are plucked as the sun rises and then are laid out to wither in the hot sun. The leaves may be intentionally bruised slightly to stimulate the fermentation process. The leaves are then dried, expertly graded and passed through strict quality control for packaging. Japanese Genmaicha

Origin: Japan

Legend has it that in the 1400's, while serving hot tea to a samurai warlord, a servant named Genamai leaned to far forward and the rice snack in his pocket fell into the samurai's tea. To their surprise, popping commenced upon the rice falling into the near boiling water. Intrigued, the samurai tasted the tea and was overwhelmed with delight in the new found flavor. He then named the tea after Genmai and it was to be served every day thereafter. Now you too can enjoy Genmaicha as an everyday tea, in the afternoon or evening and savor its delicate flavor. This gourmet green tea is exceptionally popular with the Japanese children with an after school snack, especially because it is naturally lower in caffeine than most green teas. Japan Sencha Tea Origin: Japan

It was the Buddhist monks that first brought tea to Japan. They brought along with it, the tea culture and tea plants. Cha-no-yu is a Japanese tea ceremony that includes ceremonial tastings, contests and all things tea. Almost all of the tea made in Japan is green tea. It is carefully tended to, painstakingly prepared, and finally enjoyed in ceremony. We recommend that when brewing Japanese Sencha, you brew 4 teaspoons in 1 3/4 cup of 194-degree boiling water. Infuse for 1-2 minutes. For optimal flavor we suggest that you use cool bottled water.

Jasmine Tea     Origin: China

This is a delicately flavored Jasmine tea, semi-fermented and liberally mixed with whole ivory flowers of jasmine. These delicate flowers were picked at dawn prior to opening; they were kept cool during the day to avoid opening and releasing their scent too soon. In the evening they are gathered and delivered to the green tea where they open and over the next four hours. They intoxicate the green tea with their aroma. This process may be done between four to seven times before tea is sufficiently scented. The tea is then fired again to remove any excess moisture, and sealed for shipping.
